My first cake.
I haven't baked a cake in over 3 months and for me, that's an eternity.
The drought has officially been broken.....
Citrus and Polenta Cake

This is an extremely light and crumbly cake. The original recipe pairs it with poached stone fruits where the syrup gets to ooze into the cake, and I think this is what the cake absolutely needs.
Although in saying that, I did really enjoy the subtleness of this cake.
