Egg Pots !

Every so often, a person, a thing or even a simple blog post comes into your life at exactly the right moment and quite literally changes everything for the better.  For me it was this post by Monique at Nourish Every Day - What's for Breakfast Part One.

Monique's post was just a simple breakfast idea, but it had me in such a tizzy that I couldn't get to the market and back to my stove fast enough.  An oh so simple breakfast that I prepare on a Sunday and which I know will fill me to the brim and keep me going right through until lunchtime.  

Since seeing this post a few weeks ago, I've been making different variations every Sunday, and I'm not even close to being bored.  

 


Egg Pots

Monique has 3 key protocols to follow for a week's supply:

1. Protein

10 organic eggs (i.e. 2 per breakfast)

2. Complex Carbs

In the form of sweet potatoes, pumpkin, quinoa or brown rice (between 1/4 to 1 cup per breakfast, depending on how hungry you get), 

3. Add Ons

A combination of any of the following non-exhaustive list: baby spinach, rocket, cress, cucumber, tomatoes, zucchini, avocado, feta cheese, olives, smoked salmon, seeds (sesame, sunflower, pumpkin), lemon, olive oil, cider vinegar, hummus, plain organic (unsweetened) yoghurt, pesto, etc.

What to do?

On the weekend, peel and chop your sweet potato/pumpkin however you like and roast it in the oven with a small amount of coconut oil or olive oil. Alternatively, pop on a pot of quinoa or brown rice to cook. While that’s cooking, pop all your eggs in a pot and hard boil for approx 10 mins.

When the complex carb and the eggs are done, you can stop here.  Store them in the fridge and finish building your breakfasts at a later time, or like me, you can divide everything up into containers now.

Divide your complex carb across 5 jars (I find 1/4 cup enough for me on a morning as I will often also have a veggie juice/smoothie).  Layer  in your add-ons and top with two eggs (you can peel them before adding or do this just before you eat – they keep longer in their shells so only peel 1-2 day’s worth at a time).
