Baby it's hot outside...
When it's 500 degrees outside the only food I'm going to make for my friends is rice paper rolls. That's it! I may change the filling depending on my mood, but lump it or leave it, that's all you're getting.
Fresh, light, tasty and oh so simple. So simple in fact that I'm not even going to put down the recipe for them, although I will give you the recipe for the yummy dipping sauce I made to go with them....
Over low-medium heat stir 1 cup caster sugar with 1/4 cup of rice wine vinegar until sugar is dissolved. Bring to boil and allow to cook for a few minutes, until a little thick. Add in a finely diced small red chilli and a handful of finely chopped coriander. Allow to cool.
