I was standing in front of my fridge today wondering what the hell I wanted for lunch.  I wasn't in the mood to cook, and there was no way in hell I could be bothered heading up to the shops.

Lunch was going to have to be whatever I could see in front of me.

Turned out to be a pretty great lunch in the end.

Tuna, Walnut and Cannellini Bean Salad 

There's something so satisfying about making something yummy out of a few simple, humble ingredients.  Whatever just happens to be there at that precise moment in time.
