Countdown !
The countdown has well and truly begun. In the not too distant future I'll be relaxing back in a Parisian cafe sipping my coffee (who am I kidding - glass of bubbles), and not thinking about my day to day life back her in Melbourne. No rushing back to work after my lunch break. No alarm waking me each morning. No answering of phones or replying back to emails.......God, I'm ready!
So after a particularly busy day, I decided to treat myself to a simple little French dish - something I'm quite sure I'll be re-visiting while I'm basking in the French Autumn sunshine.

Light, zingy and refreshing. This dish may be simple but it certainly doesn't lack flavour. I'm betting the dish will be even better using tomatoes grown under the beautiful Provence sunshine!
