KIDS: Strawberry Mousse Part II
Berries are on their way and I'm super excited. I know you can get them all year round, but there is something a little special about the fresh, in season ones grown locally. I could OD on them if I was that way incline....hold on a minute, I'm a Taurean! Obsessive is my basic human nature.
Maybe that also explains why I can't just make the ONE strawberry mousse? Hunh?
Strawberry Mousse, Part II

300g strawberries | 500ml cream, whipped | 250g cream cheese, room temperature | 4 tbsp caster sugar |
12 small portions or 4 larger serves
- Chop strawberries and then crush with a fork. Set aside.
- In an electric mixer, whip together the cream cheese and sugar until soft. Add whipped cream and mix until light and smooth.
- Toss in crushed strawberries and mix for a further few seconds until incorporated.
- Divide between bowl and chill before serving.
For me personally, this one was my preference - less sweet and a more sophisticated texture. Almost luxurious (if a mousse can be luxurious). However the verdict is in and Strawberry Mousse Part I is the winner for gorgeous Miss J's 3rd birthday party.
