Or as we Aussie's like to say, eggs in pots. Just doesn't have the same ring to it does it.
I love the smooth creaminess of this dish when creme fraiche is used, however there is something a little more robust and savoury when you use goats cheese . Either way, the simplicity of this dish is perfect for any lazy weekend. The dunking of a freshly baked baguette into the oozing orange yolk is just the icing on the cake.
Funny thing is, I actually never saw this dish to order on any menu the whole time I was in France. Hunh! In fact, eating breakfast out didn't seem to be what the French do, unless of course you count swigging back your coffee perched up at the bar breakfast.
As you know, I like to think of myself as French (it's just who I am), however a long lazy breakfast of eggs on a weekend is something I could never give up. All day breakfast. Just one of the wonderful perks of living in inner-city Melbourne.
